I made these colourful and tasty vegan kebabs a couple of nights ago for dinner.
I'd seen a vegan sauce in Sainsburys which sounded good - a Lemon and Piri-Piri marinade for barbeques.
I skewered courgette, red onion, red and yellow pepper and mushrooms to make the kebabs, topped with a little of the marinade and grilled until they were warm through.
The sauce smelled gorgeous and although it was admittedly a bit spicy for me it did taste good too! It will be nice if we ever have a barbeque during the summer too.
I served it with a little tomato salad - all in all a nice, simple and healthy dinner!
