Asparagus and Red Pepper soup

In keeping with asparagus season, I made us an interesting sounding soup the other night.

Asparagus and Red Pepper Soup - serves 2

Ingredients:
100g asparagus, finely chopped
100g red pepper, finely chopped
2 tsp tomato puree
1/2 tsp chilli flakes
1 tsp garlic puree
200 ml vegan stock

Gently simmer all the ingredients together for about 15 minutes, then blend together.

I served with a little pinch of chilli flakes on top, and some warm ciabatta.

This was really easy to make and tasted fantastic. The garlic and chilli gave it a bit of zing, and the soup had a really nice texture to it. I'll definitely make this again!

Sounds good - it's a great city to be veggie in, and vegans have good options too.

The colour was even nicer close up, you could still see flecks of green :)
